In lieu of LSU’s defeat last night, here’s my Shrimp & Okra Gumbo recipe.
1. Bring 8 cups of water to a boil & salt lightly.
2. Peel 1 lb of shrimp. Put the shrimp in the fridge for later and place the shells in the boiling water. Let it boil then simmer for 15 minutes to give some flavoring to the water. After 15 minutes, remove the shells and set water aside for later.
3. The roux is the hardest part of this recipe. Add 1 cup of vegetable oil into a warm skillet then pour in 1 cup of flour. Simmer on low for 25 minutes, stirring constantly. Never stop stirring because the roux will burn. It will become creamy and the color of peanut butter.

4. Throw in 1 chopped onion into the roux and cook for another 5 minutes, continuously stirring. ( As shown above)
5. Add the roux to the the salted water from earlier. Bring to a boil & simmer for 2 hours.
6. Add cayenne, salt, pepper to season.
7. Add the peeled shrimp to the gumbo 10 minutes before serving.
8. Serve over cooked rice and if you like okra, add some cooked okra to the top it off.
